How to make Oreo Brownie & S’mores Ice Cream Cake

Ingredients :

For the brownie crust:

  • 1 cup Oreo crumbs
  • 1/2 cup unsalted butter, melted

  • 1/4 cup cocoa powder
  • 2 eggs

For the s’mores ice cream:

  • 4 cups vanilla ice cream
  • 1 cup mini marshmallows
  • 1/2 cup crushed graham crackers
  • 1/2 cup chocolate chips

For the chocolate ganache:

  • 1 cup heavy cream
  • 8 oz semi-sweet chocolate, chopped

Directions :

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.

  2. In a mixing bowl, combine Oreo crumbs, melted butter, sugar, and cocoa powder. Press this mixture into the bottom of the prepared pan to form the brownie crust.

  3. In another bowl, beat the eggs and then add them to the brownie mixture, mixing until combined. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted comes out with a few moist crumbs.

  4. Allow the brownie crust to cool completely.

  5. To make the s’mores ice cream, soften the vanilla ice cream slightly, then fold in the mini marshmallows, crushed graham crackers, and chocolate chips. Spread this ice cream mixture over the cooled brownie crust evenly.

  6. Freeze the cake for at least 4 hours or until the ice cream is firm.

  7. For the chocolate ganache, heat the heavy cream in a saucepan until it just begins to simmer. Remove from heat and pour over the chopped chocolate. Let it sit for a few minutes, then stir until smooth.

  8. Once the ice cream cake is set, pour the chocolate ganache over the top and spread evenly.

  9. Return the cake to the freezer for another 1-2 hours to set the ganache.
