Ingredients
Scale
Herb and Garlic Mixture
- 2 tbsp fresh rosemary
- 2 tbsp fresh parsley
- 2 garlic cloves, crushed
- 3 tbsp extra virgin olive oil
- 1 tsp salt
- 1 tsp dried oregano
- 1 tsp dried thyme
Dry Ingredients
- 2¼ cups plain flour
- 1 tsp baking soda
- 1 tsp salt
Wet Ingredients
- ½ cup plain yogurt
- ¾ cup full-fat milk
- 2 large eggs
- 50g melted butter
Other
- 200g cheese (cheddar or your choice), sliced or grated
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 180°C (350°F). Grease and line a loaf pan to prevent sticking and ensure easy removal of the bread.
- Prepare Herb and Garlic Mixture: In a bowl, combine the fresh rosemary, parsley, crushed garlic, olive oil, salt, oregano, and thyme. Mix until all ingredients are well incorporated to form a fragrant herb and garlic blend.
- Mix Dry Ingredients: In a separate bowl, whisk together the plain flour, baking soda, and salt evenly to ensure the leavening agent is dispersed throughout the flour.
- Combine Wet Ingredients: In another bowl, whisk together the plain yogurt, full-fat milk, eggs, melted butter, and crushed garlic until smooth and homogeneous.
- Combine Wet and Dry Ingredients: Pour the wet mixture into the dry ingredients and gently fold them together, taking care not to overmix. The batter should be just combined and slightly lumpy.
- Layer Batter and Cheese: Spoon half of the batter into the prepared loaf pan. Next, add a layer of the cheese evenly over the batter, then cover with the remaining batter. Finally, sprinkle more cheese on top to create a flavorful cheesy crust.
- Bake the Bread: Bake in the preheated oven for about 50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. Remove from the oven and allow the bread to cool slightly before slicing.
Notes
- You can substitute the cheese with any hard cheese of your preference such as gouda or gruyere for varied flavors.
- Fresh herbs add bright flavors, but dried herbs can be used in half the quantity if fresh are unavailable.
- Do not overmix the batter to keep the bread tender and light.
- This bread is best served warm and fresh but can be stored in an airtight container for 2-3 days.
- Adding a pinch of chili flakes to the herb mixture can add a subtle spicy kick.
- Use full-fat dairy products for the richest flavor and texture.
