Description

A hearty and comforting Chicken Mashed Potato Bowl featuring tender sautéed chicken breasts served over creamy garlic mashed Yukon gold potatoes, topped with a savory pan sauce. This easy-to-make dish combines simple ingredients for a satisfying family meal.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tsp poultry seasoning
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Mashed Potatoes

  • 4 medium Yukon gold potatoes (about 2 lbs)
  • 4 cloves fresh garlic, minced
  • 4 tbsp butter
  • 1 cup low-sodium chicken broth (divided)
  • Salt and pepper to taste

Optional Garnishes

  • Steamed vegetables or fresh herbs

Instructions

  1. Prep the potatoes: Peel the Yukon gold potatoes and chop them into even pieces to ensure uniform cooking. Rinse them under cold water to remove excess starch.
  2. Boil the potatoes: Place the chopped potatoes into a pot of salted water and bring to a boil. Cook until the potatoes are fork-tender, approximately 15 to 20 minutes.
  3. Cook the chicken: While potatoes are boiling, heat the olive oil in a skillet over medium heat. Season the chicken breasts evenly with poultry seasoning, salt, and pepper. Sauté each side of the chicken for 6 to 7 minutes until golden brown and cooked through.
  4. Mash the potatoes: Drain the cooked potatoes and return them to the pot. Add butter, minced garlic, and half a cup of the chicken broth. Mash the mixture until smooth and creamy, seasoning to taste with salt and pepper.
  5. Prepare the pan sauce: Using the same skillet from the chicken, add the remaining half cup of chicken broth to deglaze the pan. Scrape up any browned bits and simmer until the sauce slightly thickens.
  6. Assemble the bowls: Spoon the creamy mashed potatoes into bowls, top with sliced chicken breasts, and drizzle with the pan sauce. Garnish with steamed vegetables or fresh herbs if desired. Serve warm.

Notes

  • Yukon gold potatoes are ideal for mashing due to their creamy texture.
  • Adjust poultry seasoning and salt to your preference.
  • For extra flavor, add a splash of cream or milk to the mashed potatoes.
  • Steamed vegetables such as green beans or broccoli make great side additions.
  • Ensure chicken is cooked to an internal temperature of 165°F (74°C) for safety.
