Instructions
- Mix dry ingredients: In a mixing bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt until well combined.
- Combine wet ingredients: In a separate bowl, whisk the egg and milk together until smooth and fully blended.
- Create batter: Gradually pour the wet mixture into the bowl of dry ingredients, whisking continuously until you achieve a smooth, lump-free batter.
- Heat skillet: Place a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil to prevent sticking.
- Cook pikelets: Drop heaping tablespoons of batter onto the hot skillet, spacing each pikelet slightly apart. Cook for 1–2 minutes until small bubbles form on the surface and the edges begin to set.
- Flip and finish cooking: Carefully flip each pikelet and cook for another 1–2 minutes until golden brown and fully cooked through.
