Instructions

  1. Prepare the batter: In a bowl, whisk together flour, granulated sugar, and a pinch of salt. In a separate bowl, combine eggs, milk, melted butter, and vanilla extract. Gradually mix the wet ingredients into the dry until just combined. Cover and refrigerate the batter for at least 30 minutes to allow it to rest.
  2. Cook the crepes: Heat a non-stick pan over medium heat. Pour a small amount of batter and swirl to form a thin layer. Cook until the edges lift and the bottom is golden brown, then flip and cook the other side until golden. Repeat until all batter is used, stacking the crepes with parchment paper in between to prevent sticking.
  3. Macerate strawberries: Slice the fresh strawberries and combine them with granulated sugar and lemon juice. Let them sit for at least 15 minutes to release their juices and become sweet and tender.
